In our laboratory, we develop our different mixes based on the inspiration of the moment and the vegetables of the season. And then we let life do its work, we simply guide it by offering it a saline and anaerobic environment.

Each vegetable has its own invisible universe, so each mixture will have its own unique biodiversity of lactic bacteria. A visual, olfactory and gustatory dance takes place in our fermentation tanks.

After a while, when we open the lid, we are given a glimpse of the fermentation process. The first tasting. The tasty result gives us joy to put them in the jars.

All these different lacto-fermentations have their originality and it is by varying the pleasures that we offer our organism the possibility to revitalize itself, to rediscover itself in diversity.
