Black garlic is a rather unusual specialty. Slow ripening in an oven refines the fructose naturally present in fresh garlic. A complex enzymatic process takes place, including fermentation.

The flavor is astonishing, always a little different from one vintage to the next, as is the texture. The flavor combines notes of fruit paste, licorice and chestnut...

Initially very melting, garlic will gradually dehydrate if kept in the open air. It can then reach the consistency of gum candy.

We work with Swiss organic garlic and are very satisfied with the quality of our product, which won a gold medal for local products in 2023.
