Our little protégés. Several months of fermentation for an exquisite result. The beauty of candied lemon is that we also eat its melting skin. It can surprise us in places where it is not necessarily expected, such as a slice on a pizza. It can melt into a hummus. Its juice is a good base for a salad dressing. I once hitchhiked to Italy to find a lemon on its tree. Exotic.
